What Does Vegan Mean? – Vegan.com

The best way to explain the vegan concept is to quickly define what vegan means, and then look at how and why the word came into existence.
A vegetarian diet is commonly understood to forbid meat and fish, but to allow both eggs and dairy. The word vegan takes this concept to the next level, cutting out every item of animal origin. Vegan refers to anything thats free of animal products: no meat, milk, eggs, wool,leather, honey and so forth. Your sandwich, your shampoo, andyour car seats are examples of itemsthat couldbe vegan.
Veganism carries at least three potential advantages:
Can you become a vegan through diet alone? Absolutely, since, as we will see in the next section, vegan was originally defined purely in dietary terms.
A handful of vegans(sometimes abrasively) insistthat veganism is not merely a diet, but extends into every corner of your lifestyle. In other words, you dont get to join theveganclub until you go beyond food to purge your life of leather, wool, and animal-derived cosmetics. Oftentimes, these vegans are doing the animals a grave disservice by definingthe vegan concept in the most rigid andexclusionaryway possible. These are people would love torevoke your vegan membership card if they find out you havent yet taken your 10-year-old leather winter boots to the thrift store.
The entire question of who gets to call themselves a vegan is annoying and not worth much attention. Rather than think ofveganism as an identity, its wisest to use it as a concept that can inspire you to remove animal products from your life, wherever you can easily do it. And its almost always easy.Oftentimes, its not readily apparent whether a given food or cosmetics ingredient comes from animals, so you can use our animal ingredientslist to familiarize yourself with the most common animal-derived substances.
No matter the degree to which you ultimately embrace the vegan concept, it makes sense tobeginyour transition by emphasizing dietary choices. After all, unless you buy a new fur coat every winter, the overwhelming majority of animal useassociated with your life almost certainly arises from yourfood choices.

Donald Watson coined the termvegan in 1944 in Great Britain. Heres Watson from that year, in the first issue of The Vegan News, proposing that his readers either embrace the word, or come up with a better one, as the basis for a new social movement:
We should all consider carefully what our Group, and our magazine, and ourselves, shall be called. Non-dairy has become established as a generally understood colloquialism, but like non-lacto it is too negative. Moreover it does not imply that we are opposed to the use of eggs as food. We need a name that suggests what we do eat, and if possible one that conveys the idea that even with all animal foods taboo, Nature still offers us a bewildering assortment from which to choose. Vegetarian and Fruitarian are already associated with societies that allow the fruits (!) of cows and fowls, therefore it seems we must make a new and appropriate word. As this first issue of our periodical had to be named, I have used the title The Vegan News. Should we adopt this, our diet will soon become known as a VEGAN diet, and we should aspire to the rank of VEGANS. Members suggestions will be welcomed. The virtue of having a short title is best known to those of us who, as secretaries of vegetarian societies have to type or write the word vegetarian thousands of times a year!
Watsons article was immensely important, but he kept it short, since he only sought to cover what vegan means, and why the word deserved to be coined.
The questions of why and how to go vegan require much more space to properly answer, and over the years these answers have grown fuller and more compelling, as the wisdom of the vegan concept has grown more evident. As with any mammal, cows produce milk only when pregnant and stop after their calves have been weaned. When a dairy cow delivers a female calf, the calf becomes a dairy cow herself, born to live in the same conditions as her mother. But when a dairy cow delivers a male calf, the calf is sold to a veal farm within days of birth, where he is tethered to a stall, deprived of food and exercise, and soon slaughtered for meat.(6)
Since it is unprofitable to keep cows alive once their milk production declines, life is only a few years longer for dairy cows, and are usually slaughtered at 5 years of age.(7)Thus, a cows normal lifespan of 25 years is cut 20 years short just to cut costs and maximize production.
On U.S. farms, an average of 7 egg-laying hens spend their entire lives in a battery cage with a floor area the size of a vinyl record cover.(3)
Living on wire floors that deform their feet, in cages so tiny they cannot stretch their wings, and covered with excrement from cages above them,
these chickens suffer lameness, bone disease, and obsessive pecking, which is curbed by searing the beaks off young chicks.(4)
Although chickens can live up to fifteen years, they are usually slaughtered when their egg production rates decline after two years. Hatcheries have no use for male chicks, so they are killed by suffocation, decapitation, gassing or crushing.(5)
Todays farms are not like the ones most of us learned about in school; they are mechanized factories where an animals welfare is of little concern compared to profit. Veganism emerges as the lifestyle most consistent with the philosophy that animals are not ours to use.

Green hemp smoothie, hemp protein berry muffins, and precious iced coffee
A little while ago, I almost posted a tweet along the lines of writing a cookbook is like being lowered slowly into a pit full of spiders. I stopped short of sending it out, not wanting my mom worry too much about what the NYC subway system is like these days.
Whatexactly that means I couldnt tell you: only except that Im in deep. Writing my 8th book in 10 years of cookbook-mongering, I still sometimes feel like Im exploring a damp, vast cavern guided only by the flicker of a cheap lighter and a vague memory of a map I glimpsed for a few minutes before stumbling around that old cookbook writing labyrinth.
And what isthis dark writing landscape? Its a crazy pile of recipe research, writing, grocery shopping (never ending it seems), testing, and writing it all again. With rapidly advancing deadline in August. So little time and so many recipes to visualize, write out, test, re-write, test again (if necessary). And then theres all the other stuff I need to write, such as readable and entertaining headnotes or ingredient descriptions. Dont even get me started about the mad dash to the finish line that is food photography.
Im not in it totally alone. I have an amazing recipe-ninja assistant and a small special-opts task force I emotionally lean on daily. While Im sure there are some cookbook authors happily typing and cooking away on desert (or please yes dessert) islands, I cannot create without the loving support of some precious humans/cats/dogs/goat.
The name of my new book is Protein Ninja: after all these years, my publisher at last has allowed me to have ninja in the title of a book. It only took writing a best-selling book about salad with samurai in the title name first. My inner 12-year old is raising a katana high for victory.
What is Protein Ninja? A (hopefully) impossible to live without recipe collection of things I eat every day: muffins, scones, cookies, pancakes, soups, stews, salads, collard wraps, spreads and dips for toast or vegetables or fruits, granola, and smoothie bowls that Id easily just as eat for dinner as for breakfast.
The uniting thread for these recipes is a boosted protein content from either the addition of vegan, unflavored protein powders or a fusion of whole foods: beans, nuts, tofu, seitanthe usual suspects. There will likely be a touch of nutritional analysis, but not too much. Remember kids, Im a not a doctor, just a lady who loves to create piles of dirty dishes in the kitchen.
These recipes are written in between the breathing moments of a full time job, hitting the gym, going to hardcore punk shows, meditation, and connecting with some humans and animals Im rather fond of. And if Im lucky, sleep. But there are some really cool things Im discovering too! Im having fun baking again after over a year of salad making. Im refining my cookbook writing work-flow, something that is always evolving anyway every time I hit the manuscript treadmill. And Ive truly enjoyed exploring some of these new vegan basic protein powdershemp, brown rice, peawhich I believe most any vegan can learn to love when properly prepared.
Alight, my morning caffeine slap is hitting my nervous system and its time to hit the pavement for a morning run. Hope youve savored this little update, stay tuned for more.

Actions speak louder than words! How are you going to say that you are against violence and talk about, respect, compassion, equality, peace but then go ahead and consume violence and death! If you don't like senseless violence in this world, then do not practice it three times a day while eating breakfast, lunch and dinner. Talking about how we need to change the world is too easy, especially when you're not even willing to change what you eat for breakfast!
Going vegan is t...he most basic and fundamental change one can make to transform the way the world currently operates. Animal Agriculture is the leading cause of global warming, deforestation, most freshwater usage, droughts, world hunger, species extinction, ocean dead zones, water pollution and habitat destruction! If you could extend life, prevent illness, reduce pollution, conserve resources, save money, save animals, save the environment, be happy and healthy, all in one simple step, then why not take it?
Good people don't just talk about kindness. They practice it. They don't pray about love. They actually give it. You want to be part of the solution and take responsibility for what you are doing? Well, you can do more than just talk. If you want the world to get better, don't just talk about the change; be the change. Be vegan.
